This one is for a fish meal that tastes very good. At least I think so. HAHAHA
First you need to like fish and all the tastes that surround it. Tender,chewy, delicate, spongy and so on. Well this recipe has a bit of an outside crispy crunch with an inside delicate flaking Mahi Mahi steak.
For those who do not know, Mahi Mahi is a Hawaiian word that means "strong-strong" for dolphin fish. Take a look at the images below.


These fish are very colorful and taste great. Always look for fresh Mahi steaks if available, but if you have to the frozen will be just fine. Just remember to thaw it out before use or you will have a fun time with your dish HAHAHA.
Ok, you will need to cut your steaks into 2in x 2in x 6in if possible and should look approximately like this

It is not necessary to cut them into this size however you will need to watch your baking time. Preheat oven to 400 degrees.
Next you will need these ingredients as follows:
White bread crumbs
Sea salt
Garlic salt
Cheyenne pepper
2 eggs
Water or Milk
First crack the eggs into a mixing bowl and add a 1/4 cup of milk or water. I prefer the milk in mine but no biggie. Mix it up by hand with whisk or fork. Next prepare the crumb mix. Oh before I go on please use your best judgment as to how much of these you are making and be sure you have enough ingredients. I am no pro and make my dishes on my thoughts alone. Basically I think of it (I know it's been done before) then I go with whats in the cupboard.
Ok back to the mix. Place bread crumbs in a good sized bowl then add your sea salt, garlic salt and a small amount of cheyenne pepper. You can add as much as you want just do not over do it or you will have a salty mess. Mix it all together and your ready to start the assembly line. Place a piece of Mahi into the egg mix and cover thoroughly then place into bread mix and cover thoroughly again. For extra crispy place back into egg mix then back in bread mix to give and extra layer of crunch.
Place finished Mahi on baking pan lined with non-stick foil. The non-stick foil works great so there is no sticking of the crispy outer layer. Then place in the center of oven for approx 12-15 minutes. You do not want to over cook the fish or it will taste to firm, it needs to be very slightly pink inside. The fish starts out pink to begin with then turns white. Make whatever side dish you like. I made a small side salad that went great with the baked Mahi.
